Ingredients
- 4 ea slices rustic Italian loaf
- 1 ea small to medium zucchini, ends trimmed and cut lengthwise into thin slices, about 1/8 in thick
- 1 ea small to medium yellow squash, ends trimmed and cut lengthwise into thin slices, about 1/8 in thick
- 1 Tbsp fresh thyme leaves, roughly chopped
- 16 ea cherry tomatoes, cut in half
- 1 ea small tomato, cut in half
- Ricotta cheese
- Saba
- 1 Tbsp roughly chopped Italian parsley leaves
- Extra virgin olive oil
- Salt and pepper
- Sea salt
Preparation
- Toss sliced zucchini and yellow squash with thyme, enough olive oil to just coat the slices, and a few turns of black pepper. Grill on each side to just cook through with out getting mushy, about 30 second each side. Season with a little salt when they come of the grill.
- Toast bread slices on the grill until marked and slightly charred, about 30-45 second each side.
- To assemble, lay out warm grilled bread, drizzle on extra virgin olive oil, rub cut side of small tomato over the bread, spread on ricotta cheese to cover, place sliced cherry tomatoes, top with grilled zucchini and yellow squash, drizzle on the saba, sprinkle with parsley and finish with sea salt and a drizzle of olive oil.
