Ingredients
- 3 lbs ground beef
- 8 ea Thick slices from Pullman loaf or white bread
- 3 ea yellow onions, cut in half and cut into medium slices
- 2 tbsp vegetable oil
- 1 to 1 ½ cups your favorite BBQ sauce
- 1 C mayonnaise
- 6 ea pickled jalapeños, seeds and stem removed, minced
- Zest of 1 lime
- 2 tsp fresh lime juice
- 12 slices jalapeño jack cheese
- Salt
Preparation
- Add oil to a medium sized pot over medium-high heat. Add onion and a pinch of salt. Cook until they start getting golden brown, about 10 to 15 minutes. Stir occasionally.
- Add BBQ sauce, reduce heat and allow to simmer until the onions are soft and sauce has thickened, about 25 to 30 minutes. BBQ onions can also be prepared ahead of time.
- While the BBQ onions cook, mix together pickled jalapeños, mayonnaise, lime zest, lime juice and a pinch of salt
- Divide the ground beef and form into 4, 12 oz patties.
- Season patties with salt and cook on the grill. Two minutes before burgers reach desired temperature, add the cheese.
- Remove burger and allow to rest for about 5 minute. Grill bread on both sides.
- Spread jalapeño mayonnaise to the one piece of grilled bread, and add the burger and top with BBQ onions.
